covering the boo boos

Sounds like you have your idea for the repair already: cover it with a small piece of veneer.

If veneer is not handy, though, consider making this the site of a piece of decorative art, or the location of where you paint on the name of the boat.

If you want to make a samll piece of veneer from a scrap of leftover plywood, use a router to remove most of the backing wood, leaving you a thin piece of face grain material. If you are using 4 mm plywood, set your router for a depth of cut of 3.5 mm, run it over a small area to remove the wood evenly, and you will be left with a patch that is just 1/2 mm thick aurrounded by a frame of full thickness plywood. Use a sharp knife to remove your 'veneer' patch from the plywood frame. Make the patch oversize. A few drops of epoxy will hold this in place. Carefully feather the edges with gentle sanding. (use a finer grit paper than the one that got you in trouble!) Any slight seams should be hidden under the fiberglass.
