I think it's the height of the shear joint -- the Coho has the small panels at the edge of the deck that serve to lower the shear a bit compared to the CLC. You'll be much less likely to whack your knuckles on the shear of the Coho than on the CLC. Rubrails only serve to widen the boat even more.
Size-wise, make sure you compare the Chesapeake LT to the Coho, not the full-blown SUV-sized Chesapeake. I saw one at a symposium and wondered why anyone under 6'2" and 225# would want to paddle such a barge...
