help with locks for hatch covers

I got to the point where it's time to decide how am I going to hold the hatch covers locked in their place. I'm not sure how to do it & I need help :

Few months ago I saw a "Superior" kayak with locks that I liked, it's 4 or 6 little cubes of wood attached to the deck around each hatch opening, with a vertical screw/shaft. By turning these cubes they exceed onto the hatch opening, so when the flushed cover is placed there, it will be held there. hmm, actually there is a good picture of what I'm talking about on page 116 in "the kayak shop". Anybody knows what am I talking about ? I have no idea how to install these cubes ? & how to make them turn free ?

any help appreciated. any images are appreciated even more. I'm still open to other ideas. I didn't like the 1/4 turn flushed locks like those installed in the S&G kayak from 94(?) issue of S.K.
