I think a much more elegant solution is to hold the hatches on with internal bungies. See the below link (http://ross.secant.com/kayak/) and look under 'Guillemot' and then under 'Hatches' for a picture of how this works.
I used this technique on my Cheasapeake 17LT with great success. There are no external fastenings visible and it provides a very secure hold on the hatch, as the pull is almost directly down. (Thanks for the great idea, Ross!) To release the hatch you just lift it up enough to get your hand in to unhook the bungie.
