It sounds like you need more support for your strips and form assembly. Usually you would make a set of 4 or more shaped cradles to support the hull while you planked and faired the deck. It sounds like you have planked the whole boat before starting fairing. This shouldn't be a problem so long as you can provide adequate support along the length of the boat. You can use your T-strongback as the platform to do that. Just make some concave forms to rest the boat in.
