I would recommend you glass the outside without using any shims. You'll find that once glassed and removed from the forms, the hull is still going to be quite flexible with glass on only one side. Once you've faired the inside and you're ready to glass, take a few measurements from the forms, sheer-to-sheer at 4 or 5 stations along the length of the hull. Cut some scrap pieces of strip to match the measurements to be used as spacers once you've got the glass on (measure accurately and mark the spacers with the form #). Put some packing tape on the tip to keep them from sticking to the hull. Once you've got the glass wet out on the inside, cut some notches in the glass overhang, install the spacers, and run some packing tape over it, squeezing the hull right to the spacer. This will keep the hull in the right shape while the epoxy cures. Do the same when you glass the inside of the deck.
