Keep in mind that my experience is limited to a single rental boat.
A friend rented a Daggar Atlantis to go kayaking with me. The integral rudder was unlocked via a cable that ran up to behind the cockpit and had a handle on the end. The handle could be slid over a hook, which kept a pin retracted and allowed the rudder to pivot. On this boat the cable was too long to allow the pin to release the rudder. We ended up having to stuff a stick between the handle and the hook since there was no adjustment on the cable.
This kayak also had the traditional sliding rudder peddals.
Again, this was a rental boat which had probably seen more abuse than the average kayak.
