Which Tandem to build

Hi All, I am looking for ssome help in selecting a project. I want a Tandem for two folks in their 50's whose total weight is arround 265 LBS and will be using the boat on flat water (small lakes and rivers). My current thinking is to do a Guillemont tandem.

Also, what are your thoughts on opening the cokpits up to one large space for ease in entrance?
