My opinion, go for the Guillemot Double if you have the TIME to build a strip built.

As far as the Oversized cockpits that are designed into the Double, I think they are plenty big enough for easy access at 33" front to back.

Here's a Guillemot double that was opened up to be a sit-on-top double.
