I have always wondered why people bother with these things -- but, if you are interested in them, why not start with any standard stitch-and-glue plan, and build it as specified. After the hull is wired and the seams filleted and taped, put in an ample bulkhead near the end. Then saw off the tail of the boat that extends beyond this bulkhead. The bulkhead becomes the stern. Make it strong enough so you can mount your motor to it.

If you want to mount a motor in an easier fashion, though, you can make a simple motor mount that just clamps to the gunwales near the stern of the canoe. It doesnt have to be much more complicated than a chunk of 2x4.
