I'm working on stripper #1, which has nice, varying-width strips from 3/16 to 5/16 (but most ~1/4) thanks to my bandsaw-cutting method with a too-short fence. But the outside fairing went very smootly (pun intended) without getting anywhere close to sanding through. This was with beveled strips, so I think I ended up with more mis-matches than most builders have had. But afterwards I feel confident enough to go with thinner strips.
Thinner strips would have helped a bit on my Outer island. The strips take quite a bit of bending to do about a 6" drop over 2 feet from the high bulge over your legs to the very low aft deck. Thinner strips would have bent more easily.
