Your plan sounds good. There are some stitch & glue builders who actually do short fillets between all of the stitches. When the epoxy cures, they completely remove the copper wire and then finish the fillet.
The fillet is an area where you can add a lot of unnecessary weight (Trust me, I did!). You can have a strong fillet with as little as a 1/4" radius in your fillets.
