If the epoxy was mixed right it will harden eventually. There shouldn't be an adverse affect on strength. Once the epoxy is cured it should be at full strength, regardless of how long the cure took. What products did you use? Some epoxies are susceptabile to blush while other formulations are not. If you do get blush it should not be that hard to remove it from a coat of epoxy over wood, since there is no glass cloth involved at this point.
