The best way to find out what design features translate into a boat you like is to paddle a lot of different boats. It doesn't matter much if they're wood, FG or rotomolded plastic. Find boats you're comfortable in and note dimensions, hull shape, weight, and other features. Then look for a set of plans that has as many of those features as possible.

I found it valuable to go out on a number of guided trips in rented boats. You get a lot of paddling time and you can often switch boats at rest stops during the day.
