I strip-built a canoe in an unheated garage from April - Oct of last year (kept it dry, but no protection from temp/humidity changes). Central IL weather varied in that time period from monsoon in spring to Sahara in summer to darned chilly in Oct. I had no problems with expansion, contraction, epoxy cure, or anything else.
